Chicken Tikka Wraps

Woodland Ways - Chicken Tikka Wraps

In this week's blog I'd like to share a simple one-pot meal that's easy to prepare, filling, nutritious and packs down well for life outdoors. Wrapped in a tortilla, covered in foil and tucked into your pack, it makes an ideal lunch for the following day on a canoe trip, overland journey or any time you're travelling light.

It's just as easy to cook at home as it is over a campfire or stove in the wilds.

As always, there are plenty of variations and substitutions you can make to suit your own tastes or simply use whatever ingredients you have to hand.

Ingredients

  • 6 wraps or flatbreads
  • 400g of chicken
  • 2 red onions
  • 2 red peppers
  • 60g of Tikka Masala paste
  • 1 tin chopped tomatoes
  • 2 tsp of garlic puree (4 cloves of garlic can be used)
  • 1 pack of pre cooked rice (microwave rice) 250g

Optional

  • Salt and pepper
  • Turmeric
  • Paprika
  • Garam Masala
  • Chilli flakes

Method
Cut the chicken or preferred meat into strips.

Dice the onions and peppers.

Heat a glug of oil in a pan with 1tsp of the Tikka Paste and 1tsp of the garlic puree ideally on a medium to high heat and add the chicken. Stir until just cooked and add the peppers and onions. Add more oil if necessary to keep the chicken moist.

Continue to frequently stir until the veg softens and add the chopped tomatoes with the remaining garlic and final tsp of Tikka paste.

Once the tomatoes have warmed break up the rice in the packet with your hands before opening and adding to the mix and stir in.

Please note that dried rice can be used but will need to be cooked separately. Also packets of precooked rice or microwave rice have actually been factory sterilised before cooking and packaging to kill bacteria (Bacillus cereus) which could have left a toxin if not sterilised. Microwave or pre cooked packet rice is safe to eat cold. (Taken from www.tilda.com)

At this point you may add the optional Turmeric, Garam Masala, chilli flakes, salt, pepper and paprika.

Stir well and serve in the wraps whilst enjoying minimal dishes to wash up!
