The Game Preparation Workshop is a practical and highly informative half-day experience designed to build confidence, skill, and understanding in the ethical preparation of wild game for the table. Delivered in a relaxed and supportive environment, this workshop introduces participants to the complete journey from field to plate—combining traditional skills with modern food safety awareness.

Running from 09:00 to 13:00, this four-hour workshop is intentionally kept to a maximum group size of eight, ensuring close instruction, plenty of hands-on practice, and the opportunity to ask questions throughout. It is suitable for all ages, with under-18s welcome when accompanied by an adult.

By the end of the morning, participants will not only understand how to prepare game properly, but will also gain a deeper appreciation of wild food as a sustainable, ethical, and nutritious resource.

From Fieldcraft to Food
During the workshop, participants are guided step-by-step through the preparation of wood pigeon and rabbit, two classic and widely available species that offer an excellent introduction to game handling.

You will learn how to prepare wood pigeon using both traditional non-knife methods and more conventional knife techniques. These contrasting approaches highlight efficiency, safety, and respect for the animal, while demonstrating that effective preparation does not always require complex equipment.

Once prepared, the pigeon is cooked on site, allowing participants to taste the results of their work and experience just how good properly prepared game can be.

Alongside this, participants will prepare a rabbit from start to finish, learning how to:

  • Gut and skin cleanly and efficiently
  • Joint the carcass into practical, ready-to-cook portions
  • Understand which cuts are best suited to different cooking methods

Participants take home their prepared rabbit joints, ready to be cooked and enjoyed later.
